No Bake Chocolate Chip Oreo Ganache Cheesecake

Ingredients
  

Crust

  • 14 ounces Oreos processed in food processor
  • 8 T. salted butter melted

Ganache

  • 1 c. chocolate chips
  • c. heavy cream

Cheesecake filling

  • ½ cup heavy cream
  • 20 ounces cream cheese room temp
  • ½ cup powdered sugar
  • ½ cup sour cream
  • 1 tsp vanilla
  • ½ cup mini chocolate chips

ganache topping

  • ¼ cup + 2 T. heavy cream
  • 1 cup chocolate chips

Decoration-optional

  • fresh whipped cream
  • 5 Oreos cut in half plus 3 chopped Oreos
  • ¼ c. chocolate chips
  • chocolate sauce for drizzle

Instructions
 

Crust

  • Mix butter and cookie crumbs.
  • Spray 9 inch springform pan with nonstick spray.
  • Press crumbs into the bottom and up the sides.
  • Chill in fridge 30 mins.

Ganache

  • Heat cream in microwave safe bowl to almost a boil.
  • Add chips and cover with a paper towel for one min.
  • Stir smooth and spread on crust.
  • Chill again 30 mins.

Cheesecake Filling

  • Beat cream to stiff peaks and set to the side.
  • Beat cream cheese smooth.
  • Add sugar and mix.
  • Add sour cream and vanilla.
  • Fold in the whipped cream and chips.
  • Pour over ganache in the crust.
  • Cover and freeze 2 hours.

ganache topping

  • Heat cream in microwave safe bowl to almost a boil.
  • Add chips and cover with a paper towel for one min.
  • Stir smooth and spread on the cold cheesecake.
  • Freeze 10 minutes.
  • Remove sprinform sides and transfer to cake plate if desired. (I loosened bottom wit a sharp knife)

Decorate

  • Pipe on whipped cream, top with Oreos, drizzle on sauce, chips and chopped Oreos
