Chocolate Raspberry Cheesecake Bars

Ingredients
  

Crust

  • 20 Oreo cookies
  • 5 Tablespoons butter melted

Filling

  • 16 ounces cream cheese room temperature
  • 1 egg
  • ¼ cup granulated sugar
  • 2 teaspoons vanilla extract
  • 30-40 fresh raspberries
  • cup dark chocolate chips plus extra for the top

Instructions
 

  • Preheat oven to 350F degrees. Line a 8x8 pan with nonstick foil.

Crust:

  • In a food processor grind Oreos into crumbs.
  • Mix with the melted butter and press into the pan.
  • Bake 7-9 minutes.
  • Cool.

Filling

  • Beat cream cheese, egg, sugar, and vanilla until smooth.
  • Carefully fold in the raspberries and chocolate chips.
  • Pour over crust carefully and spread.
  • Add a few extra chocolate chips, if desired.
  • Bake for 30-35 minutes.
  • Cool on counter and chill for a few hours or overnight.
  • Cut into bars.
