Crispy Honey Chicken Tenders

Ingredients
  

Chicken

  • 1 pound chicken tenders
  • ¼ cup honey
  • ½ cup Panko I used gluten free
  • ½ cup cornstarch
  • 2 eggs
  • kosher salt
  • olive oil

sauce

  • ½ cup honey
  • 2 tsp. mayonnaise
  • 2-3 tsp. dijon mustard

Instructions
 

Chicken

  • Pour the 1/4 c honey over the chicken to coat well.
  • Let this sit in the fridge 1 hour.
  • Heat olive oil in skillet for pan frying.
  • Combine the cornstarch and panko on a plate.
  • Beat the eggs in a bowl.
  • Dip the honey coated chicken in the egg and then into the cornstarch/flour mix.
  • Pan fry a few minutes on each side until golden brown and cooked through.
  • Sprinkle both sides with kosher salt while cooking.
  • Remove to a paper towel lined plate to draine excess oil.

Sauces

  • Whisk together honey, mayo and mustard.
  • Dip chicken into sauce! Mmmmm!
