Pour the 1/4 c honey over the chicken to coat well.
Let this sit in the fridge 1 hour.
Heat olive oil in skillet for pan frying.
Combine the cornstarch and panko on a plate.
Beat the eggs in a bowl.
Dip the honey coated chicken in the egg and then into the cornstarch/flour mix.
Pan fry a few minutes on each side until golden brown and cooked through.
Sprinkle both sides with kosher salt while cooking.
Remove to a paper towel lined plate to draine excess oil.
