Crispy Tortilla Egg Wraps

Ingredients
  

  • 1 grilled chicken breast cut into bite sized pieces
  • ΒΌ cup shredded cheese I like to hand grate gouda
  • 2 eggs beat in a bowl
  • butter for skillet
  • salt/pepper to taste
  • 1 flour tortilla same size as your skillet and plate (8-9 inches)

Instructions
 

  • Melt a T. butter in skillet
  • Add the chicken and saute 2 mins.
  • Pour in eggs and let them settle. Push edges in with spatula so eggs can continue cooking. Top with cheese when almost all coming together.
  • Lay tortilla on top.
  • Shut heat, lay plate on top and flip so omelette is on plate.
  • Add a little more butter to skillet and slide omelette into pan -tortilla side down.
  • Fold in half and let both sides of the tortilla crisp up!
