Crispy Tortilla Egg Wraps
This is a very simplified version! Feel free to be creative and add any veggies you like, a variety of meats or different cheeses. This was a great hit at the breakfast table!
Here is another version using honey maple turkey, red onion and spinach.
Crispy Tortilla Egg Wraps
Ingredients
- 1 grilled chicken breast cut into bite sized pieces
- ¼ cup shredded cheese I like to hand grate gouda
- 2 eggs beat in a bowl
- butter for skillet
- salt/pepper to taste
- 1 flour tortilla same size as your skillet and plate (8-9 inches)
Instructions
- Melt a T. butter in skillet
- Add the chicken and saute 2 mins.
- Pour in eggs and let them settle. Push edges in with spatula so eggs can continue cooking. Top with cheese when almost all coming together.
- Lay tortilla on top.
- Shut heat, lay plate on top and flip so omelette is on plate.
- Add a little more butter to skillet and slide omelette into pan -tortilla side down.
- Fold in half and let both sides of the tortilla crisp up!
