Chicken and Pineapple Skewers with Bang Bang Sauce

Ingredients
  

  • ¼ cup extra virgin olive oil
  • 3 tablespoons tomato paste
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 2 chipotle chiles in adobo
  • 1 ½ teaspoons sweet or smoked paprika
  • kosher salt and black pepper
  • 1 ½ pounds chicken breasts or thighs cut into bite-size chunks-I used breasts but would try thighs next time
  • 3 cups fresh pineapple chunks
  • scallions garnish
  • Bang Bang Sauce
  • ½ cup mayo
  • cup sweet Thai chili sauce
  • 2 tablespoons soy sauce
  • 2 small cloves garlic grated
  • 1 lime zested

Instructions
 

  • In a food processor, blend the olive oil, tomato paste, soy sauce, honey, chipotle, paprika, salt, and pepper until smooth
  • Mix the chicken and chipotle sauce in a bowl.
    Soak wooden skewers then thread on the chicken and pineapple.
  • Grill the skewers until lightly charred and cooked through. I used a grill pan.
  • For the Bang Bang sauce just mix everything up!
