Chicken and Pineapple Skewers with Bang Bang Sauce
Ingredients
- ¼ cup extra virgin olive oil
- 3 tablespoons tomato paste
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 2 chipotle chiles in adobo
- 1 ½ teaspoons sweet or smoked paprika
- kosher salt and black pepper
- 1 ½ pounds chicken breasts or thighs cut into bite-size chunks-I used breasts but would try thighs next time
- 3 cups fresh pineapple chunks
- scallions garnish
- Bang Bang Sauce
- ½ cup mayo
- ⅓ cup sweet Thai chili sauce
- 2 tablespoons soy sauce
- 2 small cloves garlic grated
- 1 lime zested
Instructions
- In a food processor, blend the olive oil, tomato paste, soy sauce, honey, chipotle, paprika, salt, and pepper until smooth
- Mix the chicken and chipotle sauce in a bowl. Soak wooden skewers then thread on the chicken and pineapple.
- Grill the skewers until lightly charred and cooked through. I used a grill pan.
- For the Bang Bang sauce just mix everything up!
