Bacon, Corn and Cheese Dip

Ingredients
  

  • 8 ounces Cheese grated (Monterey Jack, Cheddar, Mozzarella-your fave!)I used cheddar-next time would add some mozz, too
  • 4 cobs corn buttered, salted/peppered and roasted at 400 for 35 mins
  • 1 cup Hellman's mayo
  • 1 cup sour cream
  • ½ cup crispy bacon chopped
  • 1 cup grated Parmesan cheese
  • 2 scallions chopped

Instructions
 

  • Preheat oven to 375º.
  • Mix all ingredients together.
  • Spread evenly in casserole dish and bake 45-60 minutes till top is golden.
  • Serve with tortilla chips.
