Buttery Skin-On Chicken Breasts

Ingredients
  

  • 6 skin-on boneless chicken breast (I used Bell & Evans)
  • 1-2 T. olive oil
  • 4 T. butter cubed
  • salt, pepper, paprika, garlic powder

Instructions
 

  • Preheat oven 450 (I used convection roast setting.)
  • Heat cast iron skillet and then add oil, heating it for 3 mins on medium high.
  • Season both sides of the breasts with salt/pepperm paprika and garlic.
  • Add them to the skillet, skin side down and cook 5 mins without disturbing. This will create the fabulous sear.
  • Flip chicken, remove pan from heat and add the butter. Drizzle some of the melted butter over the chicken using a spoon and place skillet in oven.
  • Cook 8-11 mins until internal temp is 165. Mine were done in 8 mins on the convection roast setting.
  • Place chicken on a plate and loosely cover with foil for 5 mins. Drizzle melted butter leftc in pan over the chicken and slice.
