Graham Cracker S'mores Cookies

Ingredients
  

  • ¾ cup salted butter
  • ½ cup granulated sugar
  • ½ cup light brown sugar
  • 1 egg
  • 1 tbsp vanilla extract
  • 2 cups all purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 cups chocolate chips
  • 2 cups mini marshmallows
  • 12 square graham crackers
  • 6 T. melted butter
  • 12 Hershey's chocolate squares I like the snack size.

Instructions
 

  • Preheat the oven to 375° F
  • Beat butter and sugars in a mixer.
  • Add egg and vanilla, scraping sides.
  • Add flour, baking soda and salt.
    Add chocolate chips.
  • Dip each of the square graham cracker into the melted butter and lay on a parchment lined cookie sheet.
  • Scoop 3 ounces of dough out and stuff 5 mini marshmallows in the center enclosing them tightly. Lay ball on top of graham and flatten just slightly.
    *Optional: For a big wow factor with more chocolate top the graham with a square of Hershey's chocolate before laying the dough on top!
  • Bake at 375° F for 11-15 minutes or until the cookies have spread and have turned golden brown. Keep an eye on them the first time as everyone's oven is different! Use a large cookie cutter to help round the cookie when out of the oven.
  • Cool a few mins and top with a chocolate piece. Top with graham cracker crumbs, if desired.
