Ingredients
  

Noodles

  • 8 ounces fettuccine

Sauce

  • cup tamari/soy sauce
  • ¼ cup sweet Thai chili sauce
  • 2 Tablespoons toasted sesame oil
  • 2 Tablespoons rice vinegar

Chicken

  • 1 pound boneless chicken breasts cubed into bite size pieces
  • 2 Tablespoons cornstarch
  • 3 Tablespoons salted butter
  • 1 Tablespoon Tamari or Soy Sauce
  • 4 cloves garlic chopped
  • 1 shallot sliced
  • 2 bell peppers thinly sliced -broccoli would be a nice replacement or you can skip the veggie!
  • 4 scallions chopped
  • parsley chopped

Instructions
 

Noodles

  • Cook the fettuccine according to package directions. Drain.

Sauce

  • Combine tamari/soy sauce, sweet Thai chili sauce, rice vinegar and sesame oil, Mix in 1/4 cup water.

Chicken

  • Toss chicken in cornstarch right in the skillet!
    Add 2 tablespoons butter to skillet and set the skillet over medium heat.
    Cook chicken until crispy, about 5 minutes.
    Add 1 tablespoon butter, 1 tablespoon tamari/soy sauce, and the garlic.
    Cook another minute, then remove the chicken to a plate.
  • In same skillet, add the shallot, peppers (if using) and scallions.
    Cook for 5 minutes.
    Add sauce, noodles and chicken, tossing to combine for 5 mins.
  • Sprinkle on parsley.
