Saucy Thai Chicken Noodles
This dish was a fabulous dinner. I have made it twice so far. Once with peppers and once without! Both pics are below!
Ingredients
Noodles
- 8 ounces fettuccine
Sauce
- ⅓ cup tamari/soy sauce
- ¼ cup sweet Thai chili sauce
- 2 Tablespoons toasted sesame oil
- 2 Tablespoons rice vinegar
Chicken
- 1 pound boneless chicken breasts cubed into bite size pieces
- 2 Tablespoons cornstarch
- 3 Tablespoons salted butter
- 1 Tablespoon Tamari or Soy Sauce
- 4 cloves garlic chopped
- 1 shallot sliced
- 2 bell peppers thinly sliced -broccoli would be a nice replacement or you can skip the veggie!
- 4 scallions chopped
- parsley chopped
Instructions
Noodles
- Cook the fettuccine according to package directions. Drain.
Sauce
- Combine tamari/soy sauce, sweet Thai chili sauce, rice vinegar and sesame oil, Mix in 1/4 cup water.
Chicken
- Toss chicken in cornstarch right in the skillet!Add 2 tablespoons butter to skillet and set the skillet over medium heat. Cook chicken until crispy, about 5 minutes. Add 1 tablespoon butter, 1 tablespoon tamari/soy sauce, and the garlic. Cook another minute, then remove the chicken to a plate.
- In same skillet, add the shallot, peppers (if using) and scallions. Cook for 5 minutes.Add sauce, noodles and chicken, tossing to combine for 5 mins.
- Sprinkle on parsley.
