Chicken and Potatoes in Garlic Parmesan Sauce

Ingredients
  

Chicken

  • 3 chicken breasts fat trimmed
  • seasoning of your choice i used garlic parmesan and salt
  • 2 T. butter

Sauce

  • 4 T. butter
  • 4 sliced garlic cloves
  • 1 T. flour can use 1 more T. for a thicker sauce
  • 1 cup chicken broth
  • ½ cup half and half
  • ½ cup parmesan cheese
  • spinach handful or 2

Potatoes

  • 1 pound small potatoes
  • 2 T olive oil

Instructions
 

Chicken

  • Season chicken.
    Heat butter in a skillet and when hot, sear chicken on both sides. Remove to a plate. Let rest, then slice on diagonal.

Sauce

  • To the same skillet add 4 T. butter and the garlic.
  • Stir in the flour for a minute.
  • Whisk in broth, half and half, cheese and let sauce simmer.
  • Return chicken to finish cooking in pot.
  • Add some spinach.

Potatoes

  • Cut in half, season with oil, salt/pepper and air fry 20 mins or until soft.
  • Add potatoes to skillet sauce. Top with parsley if desired.
