Chicken and Potatoes in Garlic Parmesan Sauce
Ingredients
Chicken
- 3 chicken breasts fat trimmed
- seasoning of your choice i used garlic parmesan and salt
- 2 T. butter
Sauce
- 4 T. butter
- 4 sliced garlic cloves
- 1 T. flour can use 1 more T. for a thicker sauce
- 1 cup chicken broth
- ½ cup half and half
- ½ cup parmesan cheese
- spinach handful or 2
Potatoes
- 1 pound small potatoes
- 2 T olive oil
Instructions
Chicken
- Season chicken.Heat butter in a skillet and when hot, sear chicken on both sides. Remove to a plate. Let rest, then slice on diagonal.
Sauce
- To the same skillet add 4 T. butter and the garlic.
- Stir in the flour for a minute.
- Whisk in broth, half and half, cheese and let sauce simmer.
- Return chicken to finish cooking in pot.
- Add some spinach.
Potatoes
- Cut in half, season with oil, salt/pepper and air fry 20 mins or until soft.
- Add potatoes to skillet sauce. Top with parsley if desired.
