Marinated Lamb Chops

Ingredients
  

  • 1 ½ pounds lamb chops

Marinade

  • ¼ cup olive oil
  • 4 garlic cloves pressed
  • handful fresh parsley chopped
  • a few basil leaves chopped
  • 1 tsp. salt
  • fresh pepper

Pan Sauce

  • 1-2 T. olive oil
  • ½ cup chicken broth
  • 2 T. butter

Instructions
 

  • Combine all marinade ingredients. Place lamb chops in a ziploc and pour on the marinade. Let sit one hour.
  • Heat oil in a skillet and sear lamb chops on both sides until cooked. Move to a plate to rest. Reserve 2 T. oil in pan.
  • Add broth to skillet and simmer 2 mins. Off heat, whisk in butter. Return lamb chops to skillet.
  • Top with extra parsley, if desired.
