Combine all marinade ingredients. Place lamb chops in a ziploc and pour on the marinade. Let sit one hour.
Heat oil in a skillet and sear lamb chops on both sides until cooked. Move to a plate to rest. Reserve 2 T. oil in pan.
Add broth to skillet and simmer 2 mins. Off heat, whisk in butter. Return lamb chops to skillet.
Top with extra parsley, if desired.
