Marinated Lamb Chops
Ingredients
- 1 ½ pounds lamb chops
Marinade
- ¼ cup olive oil
- 4 garlic cloves pressed
- handful fresh parsley chopped
- a few basil leaves chopped
- 1 tsp. salt
- fresh pepper
Pan Sauce
- 1-2 T. olive oil
- ½ cup chicken broth
- 2 T. butter
Instructions
- Combine all marinade ingredients. Place lamb chops in a ziploc and pour on the marinade. Let sit one hour.
- Heat oil in a skillet and sear lamb chops on both sides until cooked. Move to a plate to rest. Reserve 2 T. oil in pan.
- Add broth to skillet and simmer 2 mins. Off heat, whisk in butter. Return lamb chops to skillet.
- Top with extra parsley, if desired.
