Heat oil in skillet and cook sausage, crumbling with a wooden spoon. Remove to a plate.
In same skillet, add butter/oil and sauté shallots. Cook a few mins, then add garlic for just a minute until fragrant.
Pour in chicken broth, cream and cheese stirring to combine well.Return sausage to skillet and let simmer. Cook ravioli according to store directions and serve over sauce with fresh parsley.
