Best Wine Cream Sauce

Ingredients
  

  • 4 slices bacon
  • 3 T. butter *divided through recipe
  • 1 T. olive oil
  • 2 lbs sea scallops season generously with salt, pepper, garlic powder, paprika
  • 1 large shallot chopped
  • 4 cloves garlic chopped
  • 1 cup white wine
  • ½ cup chicken broth
  • ¾ cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 bunches broccolini trimmed
  • 8 ounces fresh pasta cooked and drained

Instructions
 

  • Cook bacon in a skillet until crisp. Remove, cool and chop. Wipe out excess bacon fat leaving only a teaspoon or two in the skillet. Add 1 Tablespoon butter and 1 T. olive oil.
  • Add scallops and sear on both sides. Remove to a plate. Do in two batches if needed using an additional Tablespoon of butter for batch 2.
  • Add another Tablespoon of butter to skillet. Add shallots and sauté a few minutes.
  • Add garlic for just a minute.
  • Pour in wine a little at a time letting it cook down a bit.
  • Add broth and let simmer 5 mins.
  • Add cream. Stir. Lay broccolini on top and cover to steam it a few mins.
  • Add scallops to pan and the pasta.
  • Top with crumbled bacon.
