So, please forgive this photo-not the best! I was so busy making a reel for insta (follow me here to check it out)
that I actually forgot to take even one photo! I grabbed this one from the video! I used this sauce with scallops but you can easily make it with chicken or steak! This sauce is AMAZING!
Best Wine Cream Sauce
Ingredients
- 4 slices bacon
- 3 T. butter *divided through recipe
- 1 T. olive oil
- 2 lbs sea scallops season generously with salt, pepper, garlic powder, paprika
- 1 large shallot chopped
- 4 cloves garlic chopped
- 1 cup white wine
- ½ cup chicken broth
- ¾ cup heavy cream
- ½ cup grated Parmesan cheese
- 2 bunches broccolini trimmed
- 8 ounces fresh pasta cooked and drained
Instructions
- Cook bacon in a skillet until crisp. Remove, cool and chop. Wipe out excess bacon fat leaving only a teaspoon or two in the skillet. Add 1 Tablespoon butter and 1 T. olive oil.
- Add scallops and sear on both sides. Remove to a plate. Do in two batches if needed using an additional Tablespoon of butter for batch 2.
- Add another Tablespoon of butter to skillet. Add shallots and sauté a few minutes.
- Add garlic for just a minute.
- Pour in wine a little at a time letting it cook down a bit.
- Add broth and let simmer 5 mins.
- Add cream. Stir. Lay broccolini on top and cover to steam it a few mins.
- Add scallops to pan and the pasta.
- Top with crumbled bacon.
