Combine shredded potatoes and onion in a colander and squeeze out as much liquid as you can.
stir in the eggs, flour, salt, baking powder, pepper and paprika.
Heat oil in a skillet and add mounds of the latke mixture. Fry on both sides.
Remove to paper towels and add a sprinkle of salt.
Serve with a choice of sour cream, applesauce or sugar.
