These were fabulous….my new go to for shredded lates! My son actually even likes them without the baking powder-that gives more of a hashbrown taste! LOL
Latkes
Ingredients
- 2 pounds Russet Potatoes peeled and shredded(I did most in kitchen aid attachment on mixer and one by hand-very similar though!)
- 1 large onion hand grated on box grater (small holes)
- 2 eggs
- ¼ cup flour
- 2 tsp. kosher salt
- ½ tsp baking powder not level-i used a drop extra-just a smidge
- fresh pepper a few sprinkles
- paprika a few shakes to add color when browning
- canola oil for frying
Instructions
- Combine shredded potatoes and onion in a colander and squeeze out as much liquid as you can.
- stir in the eggs, flour, salt, baking powder, pepper and paprika.
- Heat oil in a skillet and add mounds of the latke mixture. Fry on both sides.
- Remove to paper towels and add a sprinkle of salt.
- Serve with a choice of sour cream, applesauce or sugar.
