Place potatoes and onion in food process and puree. May need to do in batches.
Place puree in colander over a bowl and let sit 20-25 mins to let water drain on its own. No squeezing needed.
Pour potato/onion mixture into a bowl.
Add eggs, flour, baking powder, salt and paprika and stir.
Heat oil in skillet until HOT. Scoop in latkes and fry until golden brown on both sides. Remove to a paper towel. Top with a sprinkle of sea salt.
Serve with apple sauce, sugar or sour cream.
