Mom's Latkes

Ingredients
  

  • 3 pounds Russet potatoes peeled and cut into chunks
  • 2 yellow onions peeled and cut into chunks
  • 2 eggs
  • 2 T. flour
  • 2 tsp. kosher salt
  • ½ tsp. baking powder
  • paprika a little sprinkling for color
  • canola oil for frying

Instructions
 

  • Place potatoes and onion in food process and puree. May need to do in batches.
  • Place puree in colander over a bowl and let sit 20-25 mins to let water drain on its own. No squeezing needed.
  • Pour potato/onion mixture into a bowl.
  • Add eggs, flour, baking powder, salt and paprika and stir.
  • Heat oil in skillet until HOT. Scoop in latkes and fry until golden brown on both sides. Remove to a paper towel. Top with a sprinkle of sea salt.
  • Serve with apple sauce, sugar or sour cream.
