Mom’s Latkes
We finally have a recipe written down for my mom’s amazing latkes! These are not shredded like most…they are pureed and out of this world!!!

Mom's Latkes
Ingredients
- 3 pounds Russet potatoes peeled and cut into chunks
- 2 yellow onions peeled and cut into chunks
- 2 eggs
- 2 T. flour
- 2 tsp. kosher salt
- ½ tsp. baking powder
- paprika a little sprinkling for color
- canola oil for frying
Instructions
- Place potatoes and onion in food process and puree. May need to do in batches.
- Place puree in colander over a bowl and let sit 20-25 mins to let water drain on its own. No squeezing needed.
- Pour potato/onion mixture into a bowl.
- Add eggs, flour, baking powder, salt and paprika and stir.
- Heat oil in skillet until HOT. Scoop in latkes and fry until golden brown on both sides. Remove to a paper towel. Top with a sprinkle of sea salt.
- Serve with apple sauce, sugar or sour cream.
