SIMPLE ROASTED CHICKEN

Ingredients
  

  • 3 split breasts
  • 4 chicken thighs
  • 5 carrots peeled, chopped
  • 3 potatoes cut into chunks
  • 1 onion chopped
  • lemon slices optional
  • olive oil
  • seasonings I like salt, pepper, garlic, paprika

Gravy

  • 2-3 T. flour
  • 1 cup chicken broth
  • 2-3 T. heavy cream

Instructions
 

  • Preheat oven to convection roast 400℉
  • Sometimes I use a rack and sometimes not. It does make the chicken crispier.
  • Season potatoes, onions with olive oil/seasonings and toss. Lay in bottom of roasting pan with lemon slices.
  • Season chicken with same seasonings and oil. Nestle in with the potatoes or on a rack above potatoes.
  • Roast 45 min. or until chicken is 165℉
  • Remove everything from pan.

Gravy

  • Heat roasting pan on stovetop.
  • Add 2-3 T. flour and whisk.
  • Pour in broth, whisking until bubbles.
  • Add cream and simmer. Taste for seasoning.
