Preheat oven to convection roast 400℉
Sometimes I use a rack and sometimes not. It does make the chicken crispier.
Season potatoes, onions with olive oil/seasonings and toss. Lay in bottom of roasting pan with lemon slices.
Season chicken with same seasonings and oil. Nestle in with the potatoes or on a rack above potatoes.
Roast 45 min. or until chicken is 165℉
Remove everything from pan.
