This is so simple yet extra delicious!


SIMPLE ROASTED CHICKEN
Ingredients
- 3 split breasts
- 4 chicken thighs
- 5 carrots peeled, chopped
- 3 potatoes cut into chunks
- 1 onion chopped
- lemon slices optional
- olive oil
- seasonings I like salt, pepper, garlic, paprika
Gravy
- 2-3 T. flour
- 1 cup chicken broth
- 2-3 T. heavy cream
Instructions
- Preheat oven to convection roast 400℉
- Sometimes I use a rack and sometimes not. It does make the chicken crispier.
- Season potatoes, onions with olive oil/seasonings and toss. Lay in bottom of roasting pan with lemon slices.
- Season chicken with same seasonings and oil. Nestle in with the potatoes or on a rack above potatoes.
- Roast 45 min. or until chicken is 165℉
- Remove everything from pan.
Gravy
- Heat roasting pan on stovetop.
- Add 2-3 T. flour and whisk.
- Pour in broth, whisking until bubbles.
- Add cream and simmer. Taste for seasoning.
