In a mixer, combine milk, 13g of sugar and yeast. Let sit 5-10 mins until frothy.
Combine flour, rest of the sugar (37g)and salt in a different bowl.
Add eggs to the yeast mixture and mix. Add in the dry ingredients and mix to form a dough. Add butter a little at a time and knead with dough hook 8-10 mins until smooth and elastic.
Move this to a greased bowl, cover and let rise in a warm spot 45 mins. It should double.
Punch it down and roll out to 1/2 inch thick on a floured surface. Use a 2 inch round cookie cutter to cut donuts. Lay on a parchment lined cookie sheet.
Cover with a damp towel and rise 15-20 minutes.
Heat oil in a dutch oven to 350℉. Fry 1-2 mins on each side until golden and lay on paper towels to drain. (or a wire rack)
Once cool, roll in sugar and pipe in the jelly!
