I made these in a cooking class… Absolutely incredible! Get frying!
You may need:
Dutch oven
Thermometer for Oil Temp
Homemade Jelly Doughnuts
Ingredients
- 350 grams all purpose flour
- 50 grams bread flour
- 13 grams granulated sugar
- 37 grams granulated sugar -added later
- 1 tsp kosher salt
- 1 T. instant dry yeast
- 120 ml whole milk heated to 110℉
- 2 eggs room temp
- 4 T. butter room temp
- canola oil for frying
Jelly Filling
- 1 cup seedless raspberry jam
- ½ cup sugar -to roll donuts in
Instructions
- In a mixer, combine milk, 13g of sugar and yeast. Let sit 5-10 mins until frothy.
- Combine flour, rest of the sugar (37g)and salt in a different bowl.
- Add eggs to the yeast mixture and mix. Add in the dry ingredients and mix to form a dough. Add butter a little at a time and knead with dough hook 8-10 mins until smooth and elastic.
- Move this to a greased bowl, cover and let rise in a warm spot 45 mins. It should double.
- Punch it down and roll out to 1/2 inch thick on a floured surface. Use a 2 inch round cookie cutter to cut donuts. Lay on a parchment lined cookie sheet.
- Cover with a damp towel and rise 15-20 minutes.
- Heat oil in a dutch oven to 350℉. Fry 1-2 mins on each side until golden and lay on paper towels to drain. (or a wire rack)
- Once cool, roll in sugar and pipe in the jelly!
