Triple Chocolate Sourdough Banana Muffins

Ingredients
  

Chocolate Sourdough Starter

  • 50 g flour I used half bread/half rye
  • 56-60 g water You want it thick but not too thick!
  • 25 g established starter
  • 15 g unsweetened cocoa powder
  • 15 g sugar

Muffins

  • ½ c. melted butter
  • 1 c. dark brown sugar
  • 3 mashed bananas
  • ½ cup chocolate starter discard (or 1 c. if it is active)
  • 2 eggs
  • 1 T. vanilla
  • 2 ½ c. flour
  • ½ c. cocoa powder
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. kosher salt
  • ½ c. melted chocolate
  • ¾ c. chocolate chips

Instructions
 

Chocolate Sourdough Starter

  • Mix all and let rise for hours.
  • To feed this starter, discard down to 25 and feed like you did with the amounts for the other ingredients.

Muffins

  • Mix first 6 ingredients.
  • Stir in the dry ingredients.
  • Fold in melted chocolate and chips.
  • Scoop into muffins cups (16)
    Bake at 350 17-20 mins.
