Triple Chocolate Sourdough Banana Muffins
Ingredients
Chocolate Sourdough Starter
- 50 g flour I used half bread/half rye
- 56-60 g water You want it thick but not too thick!
- 25 g established starter
- 15 g unsweetened cocoa powder
- 15 g sugar
Muffins
- ½ c. melted butter
- 1 c. dark brown sugar
- 3 mashed bananas
- ½ cup chocolate starter discard (or 1 c. if it is active)
- 2 eggs
- 1 T. vanilla
- 2 ½ c. flour
- ½ c. cocoa powder
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1 tsp. kosher salt
- ½ c. melted chocolate
- ¾ c. chocolate chips
Instructions
Chocolate Sourdough Starter
- Mix all and let rise for hours.
- To feed this starter, discard down to 25 and feed like you did with the amounts for the other ingredients.
Muffins
- Mix first 6 ingredients.
- Stir in the dry ingredients.
- Fold in melted chocolate and chips.
- Scoop into muffins cups (16) Bake at 350 17-20 mins.
