Caramelize the onions in the butter and oil with salt.
Stir in the minced garlic and cook 1 minute until fragrant.
Sprinkle in 2 tsp flour, stir well to coat the onions, and cook 1–2 minutes.
Deglaze with a splash of Sherry
Add chicken broth and beef broth gradually while stirring, so the flour dissolves smoothly.
Add Worcestershire and rind .
Simmer gently for 20–25 minutes so flavors meld.
Add dry sherry right at the end for brightness.
Taste and adjust seasoning with pepper and the extra salt only if needed.
