This soup was fabulous! I also added pan fried chicken meatballs toward the end and served it with french onion sourdough bread! I know, I know, there is no soup in the bowls! But you get the idea!!!!

French Onion Soup
Ingredients
- 2 yellow onions thinly sliced
- 1 red onion thinly sliced
- 3 T. butter
- 1 ½ Tbsp olive oil
- 1 ½ tsp kosher salt taste before adding more-add up to a total of 2 tsp
- 2 garlic cloves minced
- 2 tsp flour to help thicken slightly
- Splash of dry sherry
- 4 cups chicken broth
- 2 cups beef broth
- 2 tsp Worcestershire sauce
- 1 parmesan rind small piece
- 1 ½ T. dry sherry added at the end
- Freshly ground black pepper to taste
Instructions
- Caramelize the onions in the butter and oil with salt.
- Stir in the minced garlic and cook 1 minute until fragrant.
- Sprinkle in 2 tsp flour, stir well to coat the onions, and cook 1–2 minutes.
- Deglaze with a splash of Sherry
- Add chicken broth and beef broth gradually while stirring, so the flour dissolves smoothly.
- Add Worcestershire and rind .
- Simmer gently for 20–25 minutes so flavors meld.
- Add dry sherry right at the end for brightness.
- Taste and adjust seasoning with pepper and the extra salt only if needed.
