Beat butter on high until creamy for about 2 min.
Add in sugars beating 2 mins.
Add in the egg and egg yolk along with the with vanilla bean paste.
Mix on high for 3-4 min.
Add dry ingredients and mix.
Add in chocolate.
Scoop 3 ounces mounds and chill a few hours or overnight.
Bake at 350 approx 15 mins.
Scoot edges to round out with a cookie cutter.
Sprinkle with sea salt.
