Cream Cheese Crumb Cake

Cake

  • 8 oz cream cheese softened
  • ½ cup 1 stick butter, softened
  • 1 cup sugar
  • 2 eggs
  • 2 tsp vanilla bean paste
  • 2 cups flour
  • 2 tsp baking powder
  • ½ tsp salt

Crumb Topping

  • 2 cups flour
  • 1 cup light brown sugar
  • 1 tsp cinnamon
  • ½ tsp salt
  • 14 T. melted butter

Directions

  • Heat oven to 350°F.
  • Beat cream cheese, butter, and sugar until fluffy.
  • Beat in eggs and vanilla.
  • Mix flour, baking powder, and salt; add to batter.
  • Spread into a greased 9-inch square pan. Bake 10 mins.
  • For crumbs, combine flour, brown sugar, cinnamon, and salt. Stir in melted butter until large crumbs form.
  • Sprinkle all crumbs over batter and bake an additional 20-25 mins
