Normally, I make my crumb cake with sour cream but I was out. This cream cheese version fit the bill perfectly thanks to chat gpt! I would say we have a new favorite crumb cake recipe! It was also so easy to put together. For a thicker cake you can use an 8×8 but I felt this was thick enough! Cream Cheese Crumb Cake
Ingredients
Cake
- 8 oz cream cheese softened
- ½ cup 1 stick butter, softened
- 1 cup sugar
- 2 eggs
- 2 tsp vanilla bean paste
- 2 cups flour
- 2 tsp baking powder
- ½ tsp salt
Crumb Topping
- 2 cups flour
- 1 cup light brown sugar
- 1 tsp cinnamon
- ½ tsp salt
- 14 T. melted butter
Instructions
Directions
- Heat oven to 350°F.
- Beat cream cheese, butter, and sugar until fluffy.
- Beat in eggs and vanilla.
- Mix flour, baking powder, and salt; add to batter.
- Spread into a greased 9-inch square pan. Bake 10 mins.
- For crumbs, combine flour, brown sugar, cinnamon, and salt. Stir in melted butter until large crumbs form.
- Sprinkle all crumbs over batter and bake an additional 20-25 mins

I’m curious. Why always a 8 inch or 9 inch pan?? What about a 13×9 baking pan? For a larger crowd? It’s thick for the 9 inch pan. Would a person double it for a 13×9 pan?
Also, why are recipe bloggers now asking for a website?? When they never used to. What is the purpose of that??
