Preheat the oven to 375° F
Beat butter and sugars in a mixer.
Add egg and vanilla, scraping sides.
Add flour, baking soda and salt. Add chocolate chips. Dip both sides of each of the square graham cracker into the melted butter and lay on a parchment lined cookie sheet.
Scoop 3 ounces of dough out and stuff 5 mini marshmallows in the center enclosing them tightly. Lay ball on top of graham and flatten just slightly.*Optional: For a big wow factor with more chocolate top the graham with a square of Hershey's chocolate before laying the dough on top! Bake at 375° F for 11-15 minutes or until the cookies have spread and have turned golden brown. Keep an eye on them the first time as everyone's oven is different! Use a large cookie cutter to help round the cookie when out of the oven.
Cool a few mins and top with a chocolate piece. Top with graham cracker crumbs, if desired.
