Ramen Noodle Bowl

Ingredients
  

  • 2 egg yolks
  • 1 tsp. gochujang
  • 1 T. Kewpie mayo
  • 2 tsp. tamari
  • 1 tsp. dark sesame oil
  • toasted sesame seeds
  • soft or hard-boiled eggs
  • 1 pack ramen noodles discard seasoning packet
  • ½ cup reserved noodle cooking water
  • scallions chopped

Instructions
 

  • Boil ramen noodles and reserve ½ cup of the cooking water.
  • In a bowl, whisk together the yolks, gochujang, mayo, tamari, sesame oil and salt.
  • Slowly add the hot reserved noodle water into the bowl while whisking to create a glossy, creamy sauce.
  • Add in the hot noodles and stir.
  • Top with scallions, sesame seeds and egg halves.
