Roasted Shrimp Cocktail With Pesto

Ingredients
  

Shrimp

  • 1 pound colossal shrimp (9 count per pound) peeled, deveined, tails on
  • 1 T. olive oil
  • salt/pepper to taste, paprika (optional)
  • dill and parsley chopped
  • 1 lemon sliced

Pesto

  • 2 cups basil
  • 6 cloves garlic
  • ¾ cup extra virgin olive oil
  • 2 ounces pine nuts
  • 1 cup parmesan cheese
  • 1 tsp. salt
  • fresh pepper to taste

Instructions
 

Shrimp

  • Lay the shrimp on a jellyroll pan and preheat oven to 400°.
  • Drizzle oil over shrimp and season with salt, pepper and paprika if using.
  • Roast for approx 12 mins.
  • Remove and add dill/parsley along with lemon slices to the pan.
  • Serve with Homemade Pesto.

Pesto

  • Chop basil and garlic in a food processor.
  • Stream in olive oil.
  • Add cheese, nuts, salt, pepper and process a few more seconds.
