Roasted Shrimp Cocktail With Pesto
Ingredients
Shrimp
- 1 pound colossal shrimp (9 count per pound) peeled, deveined, tails on
- 1 T. olive oil
- salt/pepper to taste, paprika (optional)
- dill and parsley chopped
- 1 lemon sliced
Pesto
- 2 cups basil
- 6 cloves garlic
- ¾ cup extra virgin olive oil
- 2 ounces pine nuts
- 1 cup parmesan cheese
- 1 tsp. salt
- fresh pepper to taste
Instructions
Shrimp
- Lay the shrimp on a jellyroll pan and preheat oven to 400°.
- Drizzle oil over shrimp and season with salt, pepper and paprika if using.
- Roast for approx 12 mins.
- Remove and add dill/parsley along with lemon slices to the pan.
- Serve with Homemade Pesto.
Pesto
- Chop basil and garlic in a food processor.
- Stream in olive oil.
- Add cheese, nuts, salt, pepper and process a few more seconds.
