Sheet Pan Chipotle Prosciutto Shrimp

Ingredients
  

  • 1 ½ pounds jumbo shrimp peeled and deveined
  • 3 tablespoons extra virgin olive oil
  • 1 T. chipotle seasoning
  • kosher salt and black pepper
  • 3 tablespoons salted butter
  • 3 ounces prosciutto slices cut into strips
  • 4 cloves garlic chopped
  • 1 lemon and 1 lime sliced
  • ½ lime to drizzle over cooked shrimp
  • 1 avocado sliced

Instructions
 

  • Preheat the oven to 450° F.
  • On a baking sheet, toss the shrimp with olive oil, chipotle seasoning, salt and pepper.
  • Lay in a single layer. Scatter the prosciutto on pan.
  • Roast 6-8 minutes or until the shrimp is cooked.
  • During the last minute, remove pan and add butter and garlic.
  • Move rack up to broil position and turn on broiler.
  • Broil just till charred-keep a close eye!!!
  • Remove and add lime/lemon slices and avocado slices.
  • Squeeze fresh lime over shrimp.
