Thin S'mores Stuffed Cookies

Ingredients
  

  • 1 cup butter melted and cooled
  • 1 cup dark brown sugar (I have also used light)
  • cup granulated sugar
  • 2 eggs
  • 2 Tablespoon vanilla bean paste
  • 2 ½ c. all-purpose flour
  • 1 teaspoon baking soda
  • ½ tsp. kosher salt
  • 1 tsp. espresso powder optional-I didn't use last time but excited to try it next!
  • 2 cups semi-sweet chocolate chips
  • snack size Hershey bars broken in half
  • large marshmallows (I used mini marshmallows in past)
  • graham crackers cut in half

Instructions
 

  • Preheat the oven to 350°F or 325°F Convection. Line a baking sheet with parchment paper.
  • In a bowl, combine butter, brown sugar, granulated sugar, eggs, and vanilla extract.
  • Add dry ingredients and stir to combine,
  • Fold in chips. Chill dough an hour, if possible. Less chill time = a thinner cookie.
  • Lay graham cracker halves on the parchment. Top with a Hershey piece and 3 mini marshmallows or 1 large.
  • Use an ice cream size scoop to size out the dough and place on top sealing in marshmallows.
  • Bake for 12-14 minutes or until the edges are golden and crispy, and the centers are gooey.
  • Use a cookie cutter to help round out the shape.
