Preheat the oven to 350°F or 325°F Convection. Line a baking sheet with parchment paper.
In a bowl, combine butter, brown sugar, granulated sugar, eggs, and vanilla extract.
Add dry ingredients and stir to combine,
Fold in chips. Chill dough an hour, if possible. Less chill time = a thinner cookie.
Lay graham cracker halves on the parchment. Top with a Hershey piece and 3 mini marshmallows or 1 large.
Use an ice cream size scoop to size out the dough and place on top sealing in marshmallows.
Bake for 12-14 minutes or until the edges are golden and crispy, and the centers are gooey.
Use a cookie cutter to help round out the shape.
