Preheat the oven to 500° F with a pizza stone on the second to highest rack.
Roll out pizza dough to a 13 inch circle on a parchment round.
Dock the bottom and brush on olive oil and a pinch salt.
Use a pizza peel to slide into the oven.
Prebake crust about 6-8 minutes (remove parchment after 3 mins)
Take crust out of the oven.
While it is baking, mix 1 tablespoon olive oil, honey, balsamic vinegar, shallot, garlic, and salt/ pepper to taste.
In a different bowl, combine the brussels with 1 T olive oil and manchego.
In a separate bowl, toss together the remaining 1 tablespoon olive oil, the brussels sprouts, manchego, and a pinch of salt and pepper.
Brush crust with the olive oil/balsamic mix. Top with Havarti, top that with the brussels and return to the oven approx 10 mins until all is melted and crust is golden.
Top the pizza with the bacon when it is done and an extra sprinkle of cheese.
