Brussels Sprout Bacon Pizza

Ingredients
  

  • 1 pizza dough-I use this recipe
  • 2 T. olive oil
  • 1 T. honey
  • 1 T. balsamic vinegar
  • 1 small shallot thinly sliced
  • 2 cloves garlic grated
  • kosher salt and black pepper
  • 1 ½ c shredded brussels sprouts
  • ½ cup grated manchego cheese
  • 1 ½ cups shredded fontina or Havarti cheese or half of each
  • 4 thick-cut slices of bacon cooked and chopped

Instructions
 

  • Preheat the oven to 500° F with a pizza stone on the second to highest rack.
  • Roll out pizza dough to a 13 inch circle on a parchment round.
  • Dock the bottom and brush on olive oil and a pinch salt.
  • Use a pizza peel to slide into the oven.
  • Prebake crust about 6-8 minutes (remove parchment after 3 mins)
  • Take crust out of the oven.
  • While it is baking, mix 1 tablespoon olive oil, honey, balsamic vinegar, shallot, garlic, and salt/ pepper to taste.
  • In a different bowl, combine the brussels with 1 T olive oil and manchego.
  • In a separate bowl, toss together the remaining 1 tablespoon olive oil, the brussels sprouts, manchego, and a pinch of salt and pepper.
  • Brush crust with the olive oil/balsamic mix. Top with Havarti, top that with the brussels and return to the oven approx 10 mins until all is melted and crust is golden.
  • Top the pizza with the bacon when it is done and an extra sprinkle of cheese.
