Don’t sprinkles just make you smile? I love sprinkles! Sprinkles on ice cream, sprinkles on cookies and now a whole new world….sprinkles baked into cheesecake!! Bring on the smiles! This sprinkle cheesecake would be a perfect birthday cake, too! Or baked into mini cupcakes!! Fun stuff!
Sprinkle Cheesecake
Crust
12 golden Oreos, broken into pieces
5 tablespoons butter, cut into pieces, room temperature
1/4 cup sugar
Prepare Crust:
Preheat to 350° F.
Wrap outside of 9-inch-diameter springform pan with 2 3/4-inch-high sides with foil. Process cookies, butter and sugar in food processor until crumbs stick together. Press the crumbs on the bottom and halfway up sides of prepared pan. Bake crust 10 minutes. Set aside.
Sprinkle Cheesecake
4 (8 oz) blocks Cream Cheese, room temperature
1 cup granulated sugar
2 teaspoons vanilla
4 eggs
1 cup sprinkles (plus more for top)
vanilla frosting for decorating
golden oreos for garnish
Prepare Cheesecake
Beat cream cheese and sugar in mixer until smooth. Add vanilla and eggs-one at a time. Scrape down sides of mixer to combine everything evenly.
Add sprinkles and stir. Sprinkle some extra on top! Pour into crust. Bake in oven for 60-65 until center is just about. Remove from the oven and cool on a rack. Cover loosely and refrigerate overnight. Decorate with vanilla frosting piped on and golden oreos.
