RECIPE:
shortbread cookies:
1 stick soft butter
2 T. sugar
1 c. flour
Preheat oven to 350* Cream the butter and sugar until creamy. Beat in the flour. Roll dough into little balls. Place on a baking sheet at least 2 inches apart. Bake 13 minutes. As soon as they come out of the oven, flatten slightly, don’t smush. Let cool.
peanut butter buckeyes:
1/2 c. peanut butter
3 T. soft butter
1 c. confectioner’s sugar
1/4 tsp. vanilla
pinch of salt
chocolate of your choice for dipping!!!!
Cream butter, peanut butter, vanilla and salt. Add sugar. Shape into small balls. Wrap each ball around a caramel Hershey kiss. (remove point at top of candies)
Place that pb ball on top of the shortbread cookie. I found it easier to attach it to the cookie with a dab of melted chocolate to secure it! Let the dab dry and then dip entire truffle into chocolate. let set up on wax paper!
