This was a fabulous dinner that I will be making every week! I highly recommend this one! It uses skin-on boneless breasts so the chicken has no chance of drying out!


Dijon Roasted Chicken Breasts
Ingredients
- 3 skin-on boneless chicken breasts seasoned with salt/pepper/garlic/smoked paprika
- 2 T. olive oil
- A pat of butter for each breast
Pan Sauce
- 1 T. butter
- 1 shallot chopped
- 1 ½ cup chicken broth
- 2 tsp. dijon mustard
- 2 T. heavy cream
- 1 T. butter
- ½ lemon squeezed half sliced
Instructions
- Preheat oven to 450℉
- Heat oil in an oven safe skillet until HOT.
- Add seasoned chicken skin side down and cook 5 mins. undisturbed to sear.
- Flip chicken and cook a few mins to brown that side, too.
- Add pat of butter to each breast and place skillet in the oven until internal temp is 165. Mine were done in about 8-10 mins.
- Remove skillet and place chicken on a plate, loosely cover with foil.
Pan Sauce
- Wipe out excess oil from skillet (Leave a little) and add a Tablespoon of butter.
- Heat skillet on stove and add shallots for a few mins.
- Deglaze with broth and let it reduce.
- Whisk in mustard, cream, butter, lemon and continue cooking until reduced and delish.
- Season with salt/pepper.
- Slice chicken on a diagonal and lay in pan.
- Garnish with lemon slices.
