Berry Scones
For the next tea you host…or brunch, birthday party, book club-you need to make these berry scones. They are so amazing and serve up beautifully with raspberry jam and cream. Boil up a pot of tea and you will have one delightful snack! These are also delicious made with raisins. Below, you can also see my raisin version pictured in my cast iron skillet, too.

Ingredients
Scones
- 4 c. flour
- 2 T. Sugar
- 2 T. baking powder
- 2 tsp. salt
- ¾ pound butter
- 4 eggs lightly beaten
- 1 cup heavy cream
- ¾ c. dried berries
- 1 T. flour
- Cream Cheese Whipped Cream
- 8 ounces cream cheese
- 1 teaspoon vanilla
- ½ cup sour cream
- 2 Tablespoons powdered sugar
- 2-4 Tablespoons heavy cream
Instructions
- Combine 4 cups flour, 2 tablespoons sugar, baking powder and salt in a mixer bowl. Add the cold butter on low until it is pea-sized pieces. Add eggs and heavy cream to the dry ingredients just until blended. Mix berries with 1 tablespoon flour and then add to the scones quickly.
- Place in a greased scone pan or roll out and cut with a biscuit cutter and lay on a parchment paper lined cookie sheet.
- Brush the tops with the egg wash and sprinkle with more sugar. Bake for 20 to 25 minutes until the golden.
Cream
- Beat all together and chill to firm up!
