
Brioche Berry Crumb Buns
Ingredients
Brioche Buns
- ¾ cup whole milk warmed to 100 to 110 degrees F
- 2 tsp. instant dry yeast
- ¼ cup granulated sugar
- 1 egg
- 1 teaspoon vanilla bean paste
- 2 ½ cups bread flour
- 1 teaspoon salt
- 3 tablespoons salted butter room temp and cubed
Cream Cheese Custard Filling
- 8 ounces cream cheese room temperature
- 2 tablespoons heavy cream
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- blueberries/raspberries
- raspberry jam
Crumble:
- 3 tablespoons salted butter melted
- ½ cup light brown sugar
- ½ cup all purpose flour
- 1 egg for egg wash
- powdered sugar for dusting
Instructions
Brioche Buns:
- Warm milk to 100 - 110 degrees F.
- Pour into a mixer bowel, sprinkle in the yeast and let sit 5-10 mins. until bubbly.
- Add sugar, egg, vanilla and mix.
- Add flour and salt, letting it knead 5-8 minutes to form dough.
- Add butter and knead for 5 more minutes.
- Cover and let it rise until doubled about 1-2 hours.
Cream Cheese Filling:
- Beat all ingredients together.
Crumble
- Melt the butter and mix it with the flour & brown sugar.
- Once the dough has doubled, divide it into 6 equal balls.
- Press the center of each to create a well with your hands.
- Brush the outside edges with egg wash.
- Pipe the cream cheese filling into each center, add some jam and berries. Sprinkle crumble on the edges.
- Bake at 375 degrees 22-25 minutes, until puffed and golden.
- Once cool, can drizzle with more jam and dust with powdered sugar.
- Serve warm. Can also freeze, defrost in fridge and reheat 300 degrees 5-7 mins.
