Caramel Stuffed Brownie Cookies
Ingredients
- 6 T. salted butter
- 3.2 ounces milk or semi-sweet chocolate chopped
- 2 cups semi-sweet chocolate chips
- 3 eggs
- ½ cup sugar
- 2 tsp. vanilla extract
- ½ cup + 2 T. flour
- 2 T. unsweetened cocoa powder
- ¼ tsp. baking soda
- ¼ tsp. kosher salt
- 1 bag Dove chocolate covered caramel candies
- flaky sea salt for garnish
Instructions
- In a skillet on stove, melt butter, milk chocolate and chocolate chips until smooth.
- Let cool.
- In your mixer, beat eggs and sugar a few mins.
- Add in vanilla and the melted chocolate/butter mixture.
- Add the flour, cocoa powder, baking soda, and salt.
- Separate dough into 2 balls of dough and chill a few hours.
- Preheat oven 350 and line cookie sheet with parchment.
- Roll a T. size ball of dough and push a candy into the center, encasing it with your dough.
- Chill the dough again 15-30 mins.
- Bake 12-16 minutes. (may need an extra minute or two depending how chilled the dough is)
- Sprinkle with salt and let firm up on cookie sheets.
