These cheesecake truffles start with the best cheesecake recipe ever! Once the cheesecake (recipe link below) is cooled you will pop it in the freezer. I baked mine with the crust this time but you can probably skip it since you are not using it. Or add some of it into your truffles! Mmmmm!!! I then used an ice cream scooper to scoop my truffles out of it. Scoop the truffles onto wax paper and freeze again. Melt some dark chocolate disks. I use Chocoley because they are the best! Nut free makes them a great option for everyone! Dip the truffles int he chocolate and let them set up. Drizzle the tops with dulce de leche if desired!
