I first saw these decadent cookie dough cheesecake cookie bars over at Delish and knew I had to make them. I am glad I did as they were devoured in record time! These would certainly like ot make an appearance at your next party. Trust me , the guests will be asking for your recipe. I used an edible cookie dough to top them. Cookie Dough Cheesecake Cookie Bars
Ingredients
Cookie Crust
- 8 T. butter
- ½ c. light brown sugar
- ¼ c. granulated sugar
- 1 egg
- 1 tsp. vanilla
- 1 ¼ c. flour
- ½ tsp. kosher salt
- 1 c. semisweet chocolate chips
Cheesecake
- 16 ounces soft cream cheese
- ¼ c. sour cream
- ⅔ c. granulated sugar
- 3 eggs
- 1 tsp. vanilla
- 1 tsp. kosher salt
Cookie Dough
- 8 Tablespoons butter
- 1 c. flour
- ½ c. light brown sugar packed
- 2 T. granulated sugar
- 1 tsp. vanilla
- 2 T. whole milk
- ½ c. mini chocolate chips
Drizzle
- ½ cup chocolate chips melted
Instructions
- Preheat oven to 350° and line a 9x9 pan with nonstick foil.
Crust
- Beat butter and sugars.
- Add egg and vanilla.
- Add flour and salt.
- Fold in chocolate chips.
- Press in the baking pan and bake 20 minutes.
- Let cool.
- Lower the oven temp to 325°
Cheesecake
- Beat cream cheese, sour cream, and sugar until smooth.
- Add eggs, vanilla, and salt and combine.
- Pour over the cooled crust and bake 40 minutes.
- Cool cheesecake.
- Once cool chill a few hours in the fridge.
Cookie Dough
- Melt the butter in a skillet and swirl the pan around to keep the butter moving. Once it boils, let it turn light brown and then immediately remove from heat. Cool the butter or it will melt your chocolate chips.
- To make the flour edible, place in the microwave for 30 seconds in a bowl. Stir and check temp. Reheat for 30 seconds until it reaches 160 degrees-use a thermometer to check. Mine took a total of 60 seconds.
- Stir the two sugars into the flour to combine.
- Pour in the cooled butter.
- Add the chips and roll into balls.
- Assembly: Top with cookie dough balls and drizzle on melted chocolate.
- Keep extra cookie dough in fridge, covered well and enjoy!
