A bit of a twist on a traditional Greek salad but of course, feel free to add the ingredients you love….like cucumbers! I am not a cucumber fan, are you? Now, we have here some green olives, Kalamata olives, tons of grape tomatoes, red onion, feta cheese, marcona almonds and salt/pepper. The dressing is fabulous. I used olive oil and a splash of balsamic to begin. Not so special yet…BUT…..then I added a handful of chopped Kalamata olives right into the dressing. I like to make it in a mason jar so I have a nice, big batch to last the week!
1/2 cup olive oil
1-2 Tablespoons Balsmaic Vinegar
1 handful chopped Kalamata olives
Shake all together in a mason jar and pour over salad
